Every pierogi in Chicago claims to be handmade. Here's what that actually means in our kitchen — and why diners and critics keep ranking ours first.
After testing flour after flour, Chef Artur Wnorowski settled on a Polish variety called Królowa Kuchni — "queen of the kitchen." It's what gives the dough its signature buttery, melt-in-your-mouth texture: tender enough to yield, strong enough to hold a filling of 14-hour smoked brisket. Chicago Magazine thought the dough was worth a feature of its own — they published our recipe in January 2026.
The recipe comes from Artur's grandfather in the Rzeszów region of southeastern Poland — pierogi country, where every household guards its own version. It crossed the Atlantic in the family's hands and now gets rolled out every single morning in Wicker Park. Not batched ahead. Not frozen. If you're eating pierogi here at 7pm, the dough was flour at 7am.
The eternal pierogi question — boiled or fried? — has a traditional Polish answer: both, in that order. Boiling cooks the dough through and keeps it tender; the butter pan-fry afterward adds a golden crisp and carries the sautéed onions. That's how every order leaves our kitchen (though you can ask for boiled-only), finished with sour cream on the blue Bolesławiec pottery Poland is famous for.
